Wine Food Pairing is an adventure not an exact science. It is important that you do not take yourself too seriously, but to experiment and enjoy the wonderful tastes and textures of the wines available to us today.
My journey into wine food pairing began as a youngster in the Pacific Northwest when my parents teamed up with a neighbor, newly transplanted from Austria. If nothing else, the Austrians know how to make wine and chocolate! We made wine from berries that we picked and came up with some delightful combinations of flavors.
With any Wine Food Pairing, personal taste enters into it. Everyone has a different body chemistry and this plays a big role into what tastes good to us. Flavors that we grow up "loving" also enter into the combination. When we grow up loving a wine, our palate sometimes makes exceptions to the normal rule of wine food pairing. I simply MUST drink inexpensive Chianti with a pepperoni pizza! All of my friends enjoy at the table enjoy on iced cold pitcher of beer, but old habits die hard for me!
Even though I sometimes let my heart instead of my head rule my wine food pairing decisions, I do have some guidelines. That is what this site is all about!
The bottom line in any wine food pairing is that not everyone will agree with your exact tastes, but that doesn't mean you shouldn't go forward. Never let anxiety rule your pairing choices.
